PINK Pitaya & Berry Oatmeal

I've been making quite a lot things with Pitaya (aka. Dragon Fruit) these days!

I just LOVE the pink color that it gives haha! I think food tastes 1000X better when it's nice & colourful! Kinda brightens up my day after a tiring/long school day...

  • 1 c rolled oats
  • flesh of 1 pitaya *red dragon fruit* -> around 1 to 1 1/2 c
  • 1 c chopped strawberries (you can replace this with mangos if you prefer)
  • 1 c soy/nut milk
  • 1 c water (or more milk)
  • 2-3 tbsp coconut/maple syrup or sweetener of choice
  • 1 tsp vanilla extract
  • Toppings of YOUR choice: I used mangos, rawnola, and chocolate sauce


  1. Mash the pitaya, but leave a few chunks here and there to add some texture.
  2. Put all the ingredients in a pot, stir together and cook over medium heat until creamy (to your desired consistency) while stirring constantly -> makes it creamier! 
  3. Pour into a bowl, top with your favourite toppings, Enjoy!!! :)
