MINT CHOCOLATE PANCAKES



Part of the reason why I love holidays/weekends is that I have the time to make a proper breakfast! 

A yummy stack of pancakes is one of my FAVOURITE foods ever, but let's be honest, it does take a while to prepare em! (compared to a bowl of oats or pb&j sandwiches haha) *definitely worth it tho*




Mmm... look at THAT tower of deliciousness!

Peppermint + Chocolate is a classic combo *match made in heaven* and it tastes super awesome in pancake form too!!




Recipe

  • 1 c rolled oats
  • 1/4 c brown rice/light buckwheat/other flour of choice
  • 1 tsp baking powder
  • 1 tsp matcha powder *for color, can use other 'green powder' that you like
  • 2 tbsp coconut sugar
  • 1 ripe banana
  • 1 c soy/nut milk
  • 2-3 drops peppermint essential oil
  • 1 tsp vanilla extract
  • chocolate chips *optional but yummy

  • 2 tbsp cacao/carob/cocoa powder, sifted
  • coconut/brown rice/maple syrup, as needed

Method


1. In a blender/food processor, blend the oats until it turns into flour. Add in the rest of the dry ingredients, blend until combined.

2. In a bowl, mash the banana. Stir in the milk & peppermint essential oil. Add in the dry ingredients into the bowl, stir until combined.

3. Heat a nonstick pan over medium-high heat, you'll know it's ready when a few drops of water sprinkled on sizzles. Spray/brush your pan with a bit of oil if your pan isn't nonstick or for extra insurance (washing sticky pancake mess off a pan is not fun -> warning haha).

4. Pour ~heaped 1/4 c of batter for each pancake. Sprinkle some chocolate chips on the surface (if using). Flip when a few bubbles form and the edges look set. Let the other side cook for a little while until its fully cooked. Repeat with the rest of the batter.

5. To make the sauce, simply mix the cacao/carob/cocoa powder with enough syrup to form a sauce consistency that you like!

6. Serve with the chocolate sauce and your favourite toppings! Peppermint chocolate in pancake form, YES PLEASE!!! Give it ago for your next breakfast! :p


*NOTE


This recipe is not as fluffy/light as my Light & Fluffy VEGAN Pancakes but I'd like to provide a GF option for our gluten-intolerant friends so we all can enjoy yummy pancakes! :)

If you're not gluten-intolerant and love fluffy pancakes, then check out that recipe as well! (simply add the flavourings in this recipe to make mint chocolate pancakes). 

But this one is VERY TASTY too, of course, just different (also nice to switch things up right? :p) 
Hmm, I think the texture of this one is a bit like muffin/moist cake/(?) if I have to describe it!
