Raw Vegan Blueberry Banana Ice Cream



Finally another nice cream recipe! Those of you that follow me on snap chat/instagram probably know my obsession with these for breakfast! You can find the recipes for the more 'special' flavours here on this blog! :)

It's important to use ripe frozen bananas for making nice cream or it won't be as tasty/sweet. A banana is ripe when the skin is spotty and kinda soft to the touch (but not mushy).


Recipe

  • 7 ripe bananas, frozen
  • 1 c frozen blueberries
  • juice & zest of 1/2 a lemon
  • 2-3 tbsp coconut sugar (or other sweetener of your choice)
  • seeds of 1/2 a vanilla bean or 1 tsp pure vanilla extract
  • Chocolate Sauce: 2 tbsp carob/cacao/cocoa powder, 1 tbsp coconut sugar (or other sweetener of your choice), enough water to make a sauce consistency.

Method

  1. Put the frozen bananas (cut into small chunks), blueberries, lemon juice + zest, into a high speed blender/food processor. Blend until it turns nice & smooth, add in the sweetener and blend again. (I don't add any water, but you can add a little if needed to help it blend).
  2. Make the sauce by mixing all the ingredients together until it forms a nice sauce consistency that you like, adding water as needed.
  3. Scoop the ice cream into a bowl, top with your favourite toppings (I topped mine with strawberries and my Vegan Superfood Energy Bars that I chopped up) and drizzle the sauce! Enjoy!!!
