Vegan Rainbow Rice Bowl (ver.1)



I never knew that sweet potato fries and rice would make such a delicious combo together! This makes such a great RawTill4 dinner! Mmm all those good carbs, get in ma belly!!!

I always try to make my food colourful, because variety on what you eat is very important! All those colourful vegetables have different nutrient profiles, so eating a variety of colours will help you get all the nutrients that you need! Plus it's just eye candy right? Nutritious + Colourful food = Perfect.




For rice bowl version one, I topped my bowl of freshly steamed rice with my favourite crispy sweet potato fries, balsamic roasted beets, and boiled edamame beans.

I get this question a lot, "Where do vegans get their protein from?" and the answer is…





EDAMAME.

Seriously, this serving of edamame here (200 grams) has 22 grams of protein. So yeah, edamame is my favourite vegan protein source (and it's so CHEAP and delicious). There are also A LOT of other protein sources (heck, everything we eat has protein! Even fruits!), like tempeh, tofu, nuts & seeds, leafy greens, etc. So yep, vegans can get their protein pretty easily, just make sure that you're eating enough food.




Errrr….. how about one last look of these super-yummy crispy sweet potato fries ? YUM.
A lot of people told me they made it and they LOVE it, so definitely try it out if you haven't already!! ;)




Recipe


  • Crispy Baked Fries
  • 1 serving cooked rice (I used about 3 cups cooked)
  • 200 grams edamame beans, boiled for 5 mins and drained *read note below
  • 1 medium beet, peeled, cut into thin slices
  • 1 tbsp balsamic vinegar
  • 1 tbsp coconut sugar
  • smoked paprika powder, to taste
  • dried herbs, to taste
  • salt & pepper, to taste
  • chili/red pepper flakes, to taste

Directions


  1. To make the roasted beets, put the sliced beets into a bowl and toss with the balsamic vinegar, dried herbs, salt & pepper and coconut sugar (you can also use brown sugar/maple syrup).
  2. Arrange the slices on a parchment-lined baking sheet, bake in a pre-heated 200 Celcius oven for 20-30 minutes until cooked through (watch at the 20 minute mark or a bit earlier to make sure it's not burning).
  3. Scoop your serving of rice into a bowl, top with the boiled edamame, crispy baked sweet potato fries, and roasted beet slices. 
  4. Sprinkle your rice with some smoked paprika and other spices that you like. Enjoy!!!



*note: Just in case you haven't tried edamame before, don't eat the outer pods, but pop the 'beans' inside into your mouth  :)
