Yepp, that's right, this bowl right here is just absolute BLISS.

This is one of the most delicious, creamy, and oh-my-god-yum smoothie/ice cream/breakfast bowls that I've ever made! (and I make at least one everyday...)

All the components work together sooooo well, creating a flavour explosion in my mouth HAHA :p
Give it a go next time you have good mangos on hand! (the better/sweet/ripe your mango is, the better the flavour will be *obviously though eheh*)

Recipe
- Flesh of 2 RIPE medium/large mangos, cut into pieces & frozen (around 400 grams)
- Meat of 1 young Thai coconut *the white ones with a triangle-like top*
- 2 RIPE bananas, cut into pieces & frozen
- zest & juice of 1/2 a lemon
- 2-3 tbsp coconut sugar
- 1 tsp vanilla extract
- Sauce: 1-2 tbsp carob/cacao/cocoa powder + coconut nectar/brown rice syrup
- Toppings of choice (I used: strawberry jam, rawnola, beet chips, sprinkles of matcha powder for color). I highly recommend topping it with strawberry jam as it goes together sooooo well with the mango flavour!
Method
- Put the frozen banana & mango pieces, lemon zest & juice, coconut meat, coconut sugar, vanilla into a high speed blender/food processor. Blend until it turns nice & smooth.
- Make the sauce by mixing the ingredients together until it forms a nice sauce consistency that you like.
- Scoop the ice cream into a bowl, top with the sauce and your favourite toppings!
