<li>around 3 c cooked rice *cooked from 1 c dry rice* (white/brown/red rice, up to you!)</li>
<li>1-2 c boiled/steamed vegetables of your choice (I used broccoli as usual haha)</li>
<li>1 medium/small onion, finely chopped</li>
<li>1 garlic clove, minced</li>
<li>1/2 tsp dried basil</li>
<li>1 tbsp coconut sugar</li>
<li>1 c canned crushed tomatoes</li>
<li>1 tbsp tomato paste (optional but adds more flavour)</li>
<li>salt & pepper, to taste</li>

<li>1-2 tbsp vegan butter</li>
<li>1/2 tsp garlic powder (add more/less to taste)</li>
<li>1/4 tsp smoked paprika powder (add more/less to taste)</li>
<li>salt & pepper, to taste</li>

<li>Heat some olive oil in a pan over medium high heat (you can skip the oil *but must use a non-stick pan* if you wish, I think the olive oil gives a better flavour though).</li>
<li>Add in the onion & garlic, stir fry until fragrant and a bit browned. Add in the tomato paste & coconut sugar, stir until evenly mixed.</li>
<li>Add in the crushed tomatoes, mix, simmer for a few minutes.</li>
<li>Add in the rice & veggies, stir until evenly mixed. Mix in dried basil, salt & pepper.</li>

<i>For the Garlic 'Butter' Roasted Chickpeas:</i></div>

<li>Preheat the oven to 200 Celsius. Line a baking tray with parchment paper.</li>
<li>In a bowl, mix together all the ingredients, until the chickpeas are evenly coated with the seasonings.</li>
<li>Put the chickpeas on the tray, shake the tray to distribute it evenly.</li>
<li>Cook in the oven for around 15 minutes (cooking time may differ depending on your oven), check it every once in a while. It's done when it's golden brown & crisp on the outside.</li>

Add in the rest of the ingredients, cook & stir constantly for a few minutes.</li>
<li style="margin: 0px 0px 0.25em; padding: 0px;">Bring a pot of water to a boil, put in your chopped vegetables and boil until tender when pierced with a fork. Drain the vegetables, dump it all into a large frying pan. *how easy was that? :p*</li>

<li style="margin: 0px 0px 0.25em; padding: 0px;">Make the sauce by mixing all the ingredients together until it forms a nice sauce consistency that you like, adding water as needed.</li>

<li>Preheat the oven to 180 Celsius. Line 2 baking trays with parchment paper to prevent sticking.</li>
<li>Whisk together the miso paste & liquid sweetener to form a paste, mix it evenly with the chickpeas. Arrange them on the first baking tray. Don't overcrowd the tray or they won't cook properly.</li>
<li>Mix the broccoli with the seasonings according to your own taste. Arrange them on the second baking tray. Don't overcrowd as well.</li>
<li>Put both trays in the oven. Cook for around 20-30 minutes (or depending on your oven & how 'roasted' you want them to be). The chickpeas are done when it's crisp & browned (but not burnt!), the broccoli is done when the florets are cooked & charred on some parts. Take a peek every now and then to check! ;)</li>
<li>Serve these with rice/whatever you prefer! ENJOY!</li>

Super amaziiiiinggggg <i style="font-weight: bold;">Teriyaki Roasted Tempeh, Purple Chips, and Kimchi Stir Fry </i>served on a bed of delicious and fragrant <b>curry spiced rice</b> (which was SUPER DUPER EASY to make, I promise! *you'll see later below hahaha)<br />

The combination of flavours, textures, colours, and aroma makes this dish extremely pleasing!<br />
<br />
Tempeh is a really good source of vegan protein! And I personally think it tastes better than its cousin tofu (the texture/taste is totally different)! :p Roasting is definitely my favourite way to cook tempeh! When the marinade/seasoning seeps into the tempeh, and when it gets nicely crisp & caramelised in the oven, <b>YUM</b>. Oh and also, you can use any greens that you have on hand for the stir fried veggies!<br />

<i>For the Teriyaki Roasted Tempeh:</i><br />

<li>200gr / ~1 c diced or sliced tempeh</li>
<li>1/4 c brown rice/maple/coconut syrup</li>
<li>2 tbsp soy sauce/less sodium/tamari</li>
<li>1 tbsp coconut/brown sugar</li>
<li>2 tbsp mirin (Japanese sweet rice wine) *omit and and 1 tbsp more of each syrup & soy sauce if not available</li>
<li>salt (optional), black pepper, to taste</li>
<li>squeeze of lemon/lime juice</li>

<li>Mix everything (except the tempeh) in a small ziplock bag/container. Add in the tempeh, mix well until the tempeh slices are evenly coated (take care not to break them). Refrigerate overnight or at least a few hours to marinate the tempeh.</li>
<li>Preheat the oven to 180 Celsius. Line a baking tray with parchment paper to prevent it from sticking later.</li>
<li>Arrange the tempeh slices on the baking tray (not touching each other). Bake in the oven for about 10 minutes, flip the slices, bake for another 5-10 minutes until browned & caramelised (but not burnt! haha).</li>

<li>Heat a bit of water in a pan (you can use oil instead if you don't do hclf). When it starts to sizzle/get hot, put in the minced garlic, stir fry for a few mins until fragrant.</li>
<li>Add in the zucchini, soy sauce, and coconut sugar. Stir fry for a few mins until the zucchini gets tender. Add more water to the pan as needed to prevent it from sticking.</li>
<li>Add in the leafy greens, cover the pan and let 'steam' for a few mins until wilted/cooked (make sure you have a bit of water covering the bottom of your pan to prevent everything from sticking! ;D).</li>
<li>Mix in the kimchi, stir fry for a few mins until everything is heated through & combined. (I didn't mix my kimchi in the photo for photography purposes haha, but you should mix it in!)</li>

<li>Pour a bit of water into a small pot over medium heat. Toss in the chopped onion, garlic, chili when the water starts to sizzle. -> trick to stir frying without using oil hehe ;) Stir fry for a few minutes until lightly browned and aromatic.</li>
<li>Add in the rest of the ingredients except chopped peanuts, stir until evenly combined. Simmer for a few minutes. Stir in extra water/coconut milk if too thick (it should be thick & creamy but still kind of pourable)</li>
<li>Let it cool down for about 15 minutes, puree in a blender/food processor until smooth. Stir in the chopped peanuts for some added crunch!</li>

If it's not common where you live, try looking for it in Asian grocery stores, or buy it online! <a href="https://www.google.com/search?q=kecap+manis&client=safari&rls=en&source=lnms&tbm=isch&sa=X&ved=0CAgQ_AUoAmoVChMI6_GGm8mFyAIVRQSOCh23Ig-6&biw=1211&bih=594" target="_blank">This</a> is what it looks like (I personally recommend the <b>Bango</b> brand but I think <b>ABC</b> is more common outside Indonesia). </div>

You can make it more/less spicy by adjusting the hot sauce (see recipe below), but I urge you to challenge yourself! <li>1 heaped tbsp Asian hot sauce (I recommend either Gochujang or Sriracha)</li>
<li>1 tbsp maple/coconut syrup</li>
<li>1 tbsp tomato paste (or use more hot sauce if you're brave/really like spicy food :p)</li>
<li>1 tsp soy sauce/tamari/less sodium</li>
<li>1/4 tsp white pepper powder</li>
<li>1/4 tsp black pepper powder</li>
<li>1/4 tsp garlic powder (or<b> grate</b> in 1 small clove)</li>
<li>water, as needed</li>

<li>First you need to prepare the tofu. Drain the liquid, wash the tofu, cut it in half lengthwise. Put a thick layer of paper towel on a plate/surface, put your tofu on there, cover with more paper towel. Put something heavy (a frying pan/wood cutting board/etc) on top and let it sit for a few minutes until<b> the water is absorbed</b>. After that, cut the tofu into cubes.</li>
<li>In a small bowl, whisk together all the marinade ingredients, add enough water to form a thick-pourable sauce consistency. <b>Carefully</b> (don't break the tofu haha) mix the tofu with the marinade in an airtight container/ziplock bag. Refrigerate overnight/at least for a few hours.</li>
<li>Preheat the oven to 180 Celcius. Line a baking sheet with parchment paper.</li>
<li>Arrange the tofu cubes (make sure none of them are touching!), spoon the leftover marinade on top of each slice. Bake for 25-30 minutes until cooked, crisp on the outside, with some <i>caramelised </i>parts! Don't forget to flip them halfway through ;) !</li>
<li>Serve with a big pile of rice, some stir-fried veggies, and there you have a delicious & easy Asian style meal that's delicious, high carb low fat, and vegan of course <3 !</li>

<li>Bring a pot of water to a boil, add in the potatoes & carrots, boil until tender. Add in the vegetables, boil until cooked. Drain and set aside.</li>
<li>In a small bowl, mix together: coconut milk, tomato paste, curry powder, smoked paprika, coconut sugar.</li>
<li>Heat a non-stick pan (or add a bit of water to your pan -> trick to not use oil in stir fries, you can thank me later :p) over medium heat. Add in the garlic & onion, cook until fragrant.</li>
<li>Add in the curry mixture into the pan, mix in the cooked potatoes & vegetables, chickpeas until everything is fully combined. Add in some water/stock as needed to reach your desired thickness.</li>
<li>Enjoy with some freshly steamed rice, and there you have a delicious, nourishing, vegan meal!</li>

Also, no bananas are used in this batter. I find that bananas make pancakes dense and give them a 'banana-ey taste' (I <b>love</b> bananas but regular/traditional pancakes don't taste like bananas heheh).</div>

1 c unbleached all purpose flour (you should be able to use your favourite all purpose GF flour mix if you're allergic to gluten) *I don't use oat/buckwheat flour because it won't turn out light/fluffy like regular flour.<br />
1 1/2 tsp baking powder<br />
1/4 tsp baking soda<br />
2 tbsp coconut sugar<br />
1 tsp vanilla extract<br />
1 c vanilla/original soy milk + 1 tbsp apple cider vinegar<br />
1 tbsp ground flaxseeds + 2 tbsp water<br />

<b><u>Method</u></b><br />
<br />

1. Make the flax 'egg' by mixing the ground flaxseeds & water, and make the 'buttermilk' by mixing together the soy milk & vinegar. Set aside both while you prepare the rest of the batter.<br />
<br />
2. Sift and mix together all the dry ingredients.<br />
<br />
3. Pour the vanilla, 'soy buttermilk' & 'flax egg' into the dry mix. Mix them together (DO NOT OVERMIX or you'll get gummy/not-so-fluffy pancakes, a few lumps here and there is totally ok).<br />
<br />
4. Heat a nonstick pan over medium-high heat, you'll know it's ready when a few drops of water sprinkled on sizzles. Spray/brush your pan with a bit of oil if your pan isn't nonstick or for extra insurance (washing sticky pancake mess off a pan is not fun -> warning haha).<br />
<br />
5. Pour ~1/4 c of batter for each pancake. Flip when bubbles form and the edges are set. Let the other side cook for a little while until its fully cooked. Repeat with the rest of the batter.<br />
<br />
6. Serve with your favourite toppings! I used nutella sauce, rawnola (low fat & vegan nutella and rawnola recipe will be in my Vegan Desserts Ebook!), a sliced up banana, and some strawberries! There you have it, a delicious stack of pancakes for breakfast, check!<br />

Take the tofu out after 10 minutes and flip the slices, bake again for another 5-10 minutes with the tomatoes until cooked & lightly browned. *you don't need to flip the tomatoes, just the tofu*</li>
<li>Toss the cooked rice, torn basil leaves, and roasted tomatoes in a bowl.</li>
<li>Dip the baked tofu slices into the teriyaki sauce, serve together with the rice, drizzle any leftover sauce on top of the rice, Enjoy! :)</li>

Blend until it turns nice & smooth, add in the sweetener and blend again. (I don't add any water, but you can add a little if needed to help it blend).</li>

<li style="margin: 0px 0px 0.25em; padding: 0px;">Arrange the halved cherry tomatoes on a parchment-lined baking sheet. Put the garlic cloves (peeled) on top. Arrange the potato chunks on a separate baking sheet. Roast both in a preheated 200 Celcius oven for about 20 minutes.</li>
<li style="margin: 0px 0px 0.25em; padding: 0px;">Mash the roasted garlic in a small bowl, add in the curry powder, coconut milk & soy sauce to make a nice paste.</li>
<li style="margin: 0px 0px 0.25em; padding: 0px;">Put the cooked rice, vegetables, beans, roasted tomatoes into a big pan, stir everything together until combined.</li>
<li style="margin: 0px 0px 0.25em; padding: 0px;">Turn on the heat (medium-high), pour the curry spice mix into the frying pan, stir fry until everything is heated through, coated with the seasoning. Season with salt & pepper to taste (optional).</li>

<li>Medjool Dates: One of the main ingredients, adds a very nice sweetness and holds the bar together! They are high in fibre, minerals (potassium, copper, manganese), also lot's of Vitamin B-6! And of course, dates will give you lot's of energy!</li>

<li>Rolled Oats: A staple food around the world, and for good reason! A really good source of plant-based protein, fibre, and complex carbs that keeps you full longer!</li>

Helps me make those Vegan Gainzzz!), lot's of vitamins = nutrient powerhouse! And of course, that amazing blue-green colour it gives (no the colour is not edited, it's called a blue-green algae for a reason).</li>

<li>Put the pitted dates in the bowl of your food processor. Process until it turns into a smooth paste.</li>
<li>Put in all the other ingredients, process until everything comes together and sticky enough to form a dough (add in a bit of water only if needed/too dry).</li>
<li>Press the dough into a container/mould that is lined with parchment paper/plastic wrap (just something to keep it from sticking to the mould).</li>
<li>Chill in the fridge overnight. Cut into bars, enjoy!!!</li>

First things first, when I say detox, I mean <b>detox</b>. Which I think is about better digestion, good bowel movements, and not feeling bloated, and in some people's cases, clearing out toxins from the body. But the media these days advertise detox = weight loss, which is really quite sad..</div>

This mixture really helps me when I eat <i>not-so-good-for-you food</i> (especially when eating out) and feel bloated/sleepy/tired. But I also find that drinking the mixture everyday in the morning right after waking up makes me feel more awake, and usually a few minutes after, I get a bowel movement!</div>

This mixture is made from freshly squeezed lemon juice, Spirulina (which makes it green too), and some sweetener (I like to use liquid stevia). The good ol' lemon helps clean out your system, gives a great boost of vitamin C (the power of citrus!!!), clear your skin, and helps digestion -> bowel movement! I'm not simply making things up with this because I <b>experience</b> these benefits myself and so I want to share it with y'all! ;)</div>

This mixture is already really good for ya with the lemon juice, but what makes this mixture really special and amazingly healthy is <a href="http://www.organicburst.com/collections/all-superfood-products/spirulina?rfsn=79627.a6681" target="_blank">Spirulina</a>! I find that adding spirulina gives me a lot more energy, boosts the immune system, and really helps with sore muscles (I do heavy lifting lol). It's also a <b>complete protein source</b> which has all the complete amino acids, and <i>4 times more absorbable than beef protein.</i> For those people who says, vegans can't get protein, take that!! :p </div>

So if you can, I highly recommend trying it out, a small tub lasts me forever (5-6 months?) as it's really powerful (don't add to much or it will begin to taste bad hahah, it's a <i>blue green algae</i> after all). Also, I recently read about 'complete protein' and protein absorption, etc. The book I read says that some foods (especially most plant protein sources) have incomplete amino acid or something, so it's best to mix two sources together to balance it out and so that our body can <b>absorb and use all the protein</b> (in this case, rice and beans)! And it does make sense since this combo has been around for ages!! I think I'll need to look into that subject more, real interesting!</div>

<li style="margin: 0px 0px 0.25em; padding: 0px;">Arrange the halved cherry tomatoes on a parchment-lined baking sheet. Roast the cherry tomatoes in a preheated 200 Celcius oven until wrinkled (but not burnt), about 20 minutes.</li>
<li style="margin: 0px 0px 0.25em; padding: 0px;">Bring a pot of water to a boil, put in your chopped vegetables and boil until tender when pierced with a fork (about 3-5 minutes). Drain the vegetables (but leave some moisture in them to help cooking process later), dump it all into a large non-stick frying pan.</li>
<li style="margin: 0px 0px 0.25em; padding: 0px;">Add in the cooked rice, beans and roasted tomatoes to the pan, stir everything together until mixed.</li>
<li style="margin: 0px 0px 0.25em; padding: 0px;">Turn on the heat (medium-high), pour the tomato paste, sriracha, coconut sugar, curry powder into the frying pan, stir fry until everything is heated through, coated with the seasoning (add water if needed until the consistency is creamy and 'saucy'). Taste a bit, add more coconut sugar if you want it to be sweeter, add more spicy sauce if you want it spicier, etc.</li>
